A Date with Mom

Want something fun to do with your Mom?  How about a date with her.  Whether it’s your Mom or your Children’s Mom.  Have a “Date” night at our Marvelous Mint event which will be held Saturday, May 21, 2016 from 7 to 9 PM!

The event that serves Mojito’s is always well received!  Dinner will feature Jamaican Jerk Chicken skewers on the grill, with Caribbean rice and beans as a side. As you catch up with friends and sip on a Mojito you can enjoy the beauty of the garden. Dinner will finish with mint chocolate chip brownies for dessert.  Of course we will make something for the garden!  This time we are doing something different, mint hanging baskets, which will contain mint, and seasonal color.  This will be a great addition to your garden and smell great while it hangs around.  I have included links to all of the recipes I used so enjoy!  Make sure to make your reservations and surprise your Mom with a Date! Date Night – Marvelous Mint Recipes

The recipe in the link I provided uses pork instead of chicken but they flavor is great in this recipe and just substitute Chicken for the Pork.  Combine 3 green onions, chopped coarsely, 1 clove garlic minced about 1 teaspoon, 2 teaspoons peeled, diced fresh ginger, 1/2 jalapeno seeds removed and chopped, 2 Tablespoons jerk seasoning, 1/2 teaspoon salt, 2 Tablespoons brown sugar, 2 Tablespoons olive oil, 2 tablespoons soy sauce.  Mix this in a food processor until a paste is formed.  Dice up 4 chicken breast into 1 inch cubes, put into gallon bag with mixture and marinate at least an hour or overnight.  For grilling thread marinated chicken cubes on skewers with pineapple chunks, grill on medium high heat for 5 minutes or until chicken is done.

Jerk seasoning recipe 2 teaspoons dried thyme, 2 teaspoons, ground allspice, 2 teaspoons ground black pepper, 1/2 teaspoon ground cinnamon, 1/2 teaspoon cayenne pepper, 1/2 teaspoon salt.  Mix it all together and store in an airtight container.

Caribbean Rice and Beans is a great side dish for Jerk Chicken,  it’s subtle flavors blend nicely with the spice of the Jerk Chicken.  Wash 2 cups of uncooked long grain rice and drain.  Heat a saucepan with 1/4 cup canola oil, then add 1/2 medium onion diced, 2 cloves garlic minced, 1 sprig fresh thyme diced, 1 whole jalapeno seeds removed diced, saute about 1 minute.  Stir rice into pan, cook for two minutes add  15.5 ounce can rinsed red kidney beans,  13.5 ounce coconut milk, 2 small bay leaves, 1 teaspoon chicken bouillon, 2 teaspoons creole spice, and 3 cups water or chicken broth.  Bring to a boil reduce heat, cover with a lid and simmer for 20 minutes or more.  Stir occasionally to prevent burns and add water or broth as necessary. After done adjust taste with salt and pepper and remove bay leaves.

Marvelous Mint Drinks

Is there any better pairing for Jamaican Jerk Chicken than a fresh Mojito?  I think not so that is what I picked as our pairing for this event.  On a warm summer evening I can think of nothing better than a crisp Mojito and spicy food!  To make a Mojito you need 10 fresh mint leaves, 1/2 lime cut into wedges, 2 tablespoons sugar to taste, 1 cup ice cubes, 1 1/2 fluid ounces white rum, 1/2 cup club soda.  Muddle the mint leaves with 1 lime wedge, then add to more limes and the sugar and muddle some more.  Fill the glass almost to the top with ice,  Pour the rum over the ice and fill the glass with carbonated water, Stir, taste and add more sugar if desired.  Garnish with Lime wedge. Then enjoy with friends on the Patio or in The Garden!
